I have one of the 'rare' double din radios with the eqal. I'm wanting to upgrade to a cd/mp3/aux player but was curious if 'any' generic double din unit will fit with the stock plastic trim/equipment?

A generic one should fit. I had no issue putting a 5 year old Pioneer touchscreen in my colt, now in a friends summit.

I would prefer a single din, but it seems like parts for this thing are hard to find?? I was considering trying to find a stock double din, perhaps from an evo or sti, though I have no idea if that would also fit??

The only cars that came from the factory with double-din units were DSM's. EVO's and STi's are single. You would have no problem running a single din. I did it in my Mirage. it was originally a double-din with the massive tape-deck and EQ, and I put a normal Sony deck in it. You can buy kits that will give you a bezel and little tray underneath, they don't fit super awesome, but it gets the job done.

Pretty sure I still have my radio trim panel from my old base model colt. It had the single din radio. If you find something you like I can put it in while the car is here.

Just look in the junkyard for any Japanese car from that era. Almost all of them(with a few exceptions) conform to the rectangular din requirement. I put cup holders and under radio trays from toyotas and mazdas before with plug and play success. Also maplights for the jdm versions of our cars can be had out of older corollas. The Japanese weren't ultra competitive/exclusive like ford/chevy/dodge over here, they bought most of there stuff from other car manufactures, and from the same suppliers as other car manufactures to keep costs down. This makes alot of Japanese cars comply with standards alot better than domestic manufactures.

Install kit from walmart+adapter plug+any single din radio. Real easy to do.

The dsm, which was mint that I picked up as the donor car had the equalizer and radio. I'd keep the stock look, and use adaptor for an mp3. If you think about it, who really uses cd's anymore? It's mostly load ipod and go, I kept my stock colt radio, like the stock look.
