Ok, I'm going to swap to the manual transmission this weekend. My question is, can I use the starter I already have? I wasn't sure if it was different between manual and auto. Also the plate that goes between the block and the trans, do I need a 5 speed specific plate? If I can use the auto started and plate then all I need are the axles and I'm good to go.

You will need the manual starter plate for sure, as far as the starter goes, I am not sure to be honest.

Make sure it's a 5spd FWD 63t starter plate.
